Perched between 2,600 and 4,900 feet above sea level, Chiang Mai is one of Thailand’s most celebrated coffee-producing regions, renowned for its exceptional Arabica. The region’s cooler mountain climate slows the maturation of coffee cherries, extending the ripening period and allowing richer, more complex flavors to develop.
Many farms here embrace sustainable, eco-friendly methods — from organic cultivation without synthetic pesticides or fertilizers to shade-grown practices that protect biodiversity and preserve healthy soils. These approaches not only safeguard the environment but also enhance the quality of the beans.
Coffee in Chiang Mai is deeply rooted in the traditions of indigenous hill tribes such as the Akha, Karen, and Lahu. ABOUT THIS COFFEE
This rare Typica-only lot begins with a 2-day cherry fermentation, followed by a second stage of mucilage fermentation in CO₂-enriched, temperature-controlled tanks. Dried slowly for 17 days with the mucilage intact, the result is a sweet and syrupy cup.
