This rare Typica-only lot begins with a 2-day cherry fermentation, followed by a second stage of mucilage fermentation in CO₂-enriched, temperature-controlled tanks. Dried slowly for 17 days with the mucilage intact, the result is a sweet and syrupy cup.

ANAEROBIC NATURAL
Whole cherries undergo anaerobic fermentation with native yeast in precision-controlled tanks. Dried as whole fruit for 28 days until 11% moisture is achieved, this process locks in deep red fruit notes with complexity and structure.

ANAEROBIC WASHED
From the oldest plot on the farm, this lot features ripe cherries dry-fermented anaerobically with carefully selected native yeast and then re-fermented with mucilage in temperature- and pressure-controlled tanks. Following a 2-day fermentation, the parchment is cleaned and slow-dried for 10 days, showcasing elevated sugars and exceptional enzymatic character.
