ABOUT THE REGION
Perched between 2,600 and 4,900 feet above sea level, Chiang Mai is one of Thailand’s most celebrated coffee-producing regions, renowned for its exceptional Arabica. The region’s cooler mountain climate slows the maturation of coffee cherries, extending the ripening period and allowing richer, more complex flavors to develop.
Many farms here embrace sustainable, eco-friendly methods — from organic cultivation without synthetic pesticides or fertilizers to shade-grown practices that protect biodiversity and preserve healthy soils. These approaches not only safeguard the environment but also enhance the quality of the beans.
Coffee in Chiang Mai is deeply rooted in the traditions of indigenous hill tribes such as the Akha, Karen, and Lahu. For generations, these communities have applied their agricultural knowledge and time-honored techniques to nurture the region’s coffee, contributing to its diversity and unique cultural heritage.
This combination of ideal growing conditions, sustainable farming, and the dedication of local communities has firmly established Chiang Mai as a cornerstone of Thailand’s specialty coffee scene.
ABOUT THIS COFFEE
Whole cherries undergo anaerobic fermentation with native yeast in precision-controlled tanks. Dried as whole fruit for 28 days until 11% moisture is achieved, this process locks in deep red fruit notes with complexity and structure.
